Ingredients:
For the Brownies:
½ cup salted butter, melted π§
½ cup cocoa powder π«
1 cup brown sugar π¬
1 teaspoon vanilla extract π¨
2 large eggs π₯
1 teaspoon salt π§
1 cup all-purpose flour πΎ
For the Cheesecake Filling:
8 oz cream cheese, room temperature π§
¼ cup sour cream or plain Greek yogurt πΆ
⅓ cup granulated white sugar π¬
1 large egg π₯
1 teaspoon vanilla extract π¨
1 (21 oz) can cherry pie filling (use ½ can if you prefer a shorter bake time) π
Optional: whipped cream and maraschino cherries for garnish ππ¦
Instructions:
1️⃣ Prepare the Brownies:
In a medium bowl, combine the melted butter and cocoa powder. Let the mixture sit for 5 minutes to "bloom," enhancing the chocolate flavor.
After 5 minutes, add the brown sugar and vanilla extract, mixing well with a whisk.
Add the eggs, one at a time, mixing thoroughly between each addition. Then, add the salt and flour, stirring until fully combined.
Grease a 9x9 inch baking pan or line it with parchment paper. Spread about ¾ of the brownie batter into the pan, reserving the rest for later.
2️⃣ Make the Cheesecake Filling:
In a separate mixing bowl, beat the cream cheese and sour cream (or Greek yogurt) together on medium speed until creamy, about 1-2 minutes.
Add the sugar, egg, and vanilla extract, and mix until smooth, approximately 2 more minutes.
3️⃣ Assemble the Brownies:
Preheat the oven to 350°F (175°C).
Pour the cheesecake mixture over the brownie batter in the pan.
Drop spoonfuls of cherry pie filling across the cheesecake layer, spacing them about 1 inch apart.
Spoon the reserved brownie batter into the gaps between the cherry filling.
Use a toothpick to lightly swirl the brownie batter and cherry filling together to create a marbled effect. Be careful not to overmix.
4️⃣ Bake:
Bake for 40-45 minutes until the edges are set and the middle is slightly jiggly.
Let the brownies cool in the pan for at least 2-3 hours before slicing. You can refrigerate them after they've cooled slightly to help firm up for cleaner slices.
5️⃣ Optional Garnish:
Top the brownies with whipped cream and maraschino cherries for an extra sweet touch!
Enjoy these decadent Cherry Cheesecake Brownies!
Each bite combines rich chocolate, tangy cheesecake, and the sweetness of cherries for an irresistible treat! π«π
